Irish Buttermilk Soda Bread
4 C white flour - try and use good high gluten bread flour
1 1/2 t salt
1 t baking soda
2 C buttermilk
Preheat oven to 375 degrees and spray an 8 inch round cake pan.
In a large bowl, stir dry ingredients together. Add the buttermilk and stir until the dough cleans the side of the bowl and holds
together. Knead on a lightly floured surface for a minute, pat into an 8 inch round about 1 1/2 inches thick. With a sharp knife, slash
an X into the top. Place the loaf in the cake pan, and bake for about 45 to 50 minutes until nicely browned and the X has spread
open. Cool on a rack, then wrap in a damp towel and allow to rest on the rack for 8 hours. Slice very thinly, 1/4 inch thick or less.
