Peach Fools
3 peaches, medium-sized, ripe
2 tbsp sugar
1 cup heavy or whipping cream
1/8 tsp almond extract
mint leaves for garnish
Peel, halve, and pit peaches. Reserve 1 peach half for garnish. Cut
remaining peaches into chunks. In a blender at medium speed, blend peach chunks and sugar until smooth. In small bowl, with mixer at medium
speed, beat heavy or whipping cream and almond extract until stiff peaks form. With rubber spatula or wire
wisk, fold peach puree into whipped-cream mixture.
